Christmas turkey recipe

  1. This recipe uses a 5kg fresh turkey and serves around 6 people. Preheat the oven to gas 5, 190°C, fan 170°C.
  2. Get 50g butter to room temperature and rub it all over the turkey, and sprinkle with sea salt. Cut a lemon into quarters and place inside the cavity with 5 rosemary sprigs.
  3. Peel and halve 3 large onions. Place the onion in a large flameproof roasting tin and sit the turkey on top. Cover with kitchen foil, tucking under the tin to create a foil tent. Roast the turkey according to the pack instructions (about 3 hr 30 minutes). 30 minutes before the end of the cooking time, remove the foil and continue cooking until the turkey is golden.
  4. While the turkey is roasting, make the stuffing. Peel and chop 2 red onions. Fry the onions in 2 tablespoons olive oil for 4 to 5 minutes until transparent. Place in a bowl and add 250g breadcrumbs, 125g roughly chopped macadamia nuts, 100g dried cranberries, rind of 2 oranges, juice of 1 orange, 2 eggs, salt, freshly ground black pepper. Mix and season well. Place in a shallow, ovenproof dish and set aside.
  5. At the end of the roasting time, remove the turkey from the oven and check it’s cooked by piercing the fattest part of the thigh with a skewer. The juices should run clear. If there is pink in the juices, return to the oven for a little longer, and then check again.
  6. Once cooked, remove the turkey from the roasting tin and set aside to rest for 30 minutes, covered loosely with foil.
  7. Put the stuffing in the oven and cook for 35-40 minutes until golden.
  8. For the gravy, peel and slice 250g onions. Skim the excess fat off the juices in the turkey roasting tin and add the onions and a pinch of cumin seeds.
  9. Fry gently until the onions are tender. Add 1 tablespoon cocoa powder (to offset the tanginess of wine), 2 tablespoons clear honey and enough plain flour to absorb the juices and remaining fat. Cook for 1-2 minutes.
  10. Gradually stir in 250ml red wine (preferably Merlot) and 300ml turkey or veg stock, and bring to a simmer. Adjust seasoning to taste, then cook for 5-10 minutes. Serve with the turkey and stuffing, and enjoy!
