Bat truffles

  1. These spookily cute bats are easy to create. First, chop up 225g dark chocolate.
  2. In a small pan, gently heat 175ml double cream and 25g unsalted butter. Remove from the heat just before boiling and add the dark chocolate, stirring until melted. Pour into a small container and freeze for 1 hour, until solid.
  3. Take the frozen chocolate out of the freezer and leave to stand for 5-10 minutes. Scoop out 12 chocolate balls onto a tray using a melon baller or tablespoon. Put these back into the freezer for 30 minutes. Then remove and smooth the balls with a blunt knife, if needed.
  4. Next is covering the truffles. Get 3 plates and spoon 2 tablespoons cocoa powder, 2 tablespoons chocolate vermicelli and 3 tablespoons desiccated coconut onto the separate plates. Gently cover the truffles in the different coatings - 4 in cocoa powder, 4 in vermicelli and 4 in coconut.
  5. Now for the bat wings. Split 6 Oreo chocolate cookies in half with a knife. Break each biscuit in half and, with the round biscuit edge at the top, gently push into the top of the truffles.
  6. For the finishing touches, press 2 white chocolate chips into each truffle for eyes, with a dot of chocolate writing icing for the pupils. Halve 6 raisins and press a half onto each truffle as a nose. Then grate a little white chocolate and use 2 flakes for teeth.
  7. Keep the bats in the fridge until ready to serve.
